From the lantern-lit dining room to the fragrant tagines and hand-crafted cocktails, every detail is designed to transport you to Morocco. Owned and operated by a Moroccan family, with a chef who shares the recipes and traditions of home, Marrakesh is more than a restaurant -- it’s a cultural experience.

The Owners

Marrakesh Moroccan Cuisine & Bar is the realization of Fouad Zoubaa’s lifelong dream. Raised in Morocco in a close-knit family of six siblings by his parents, Zineb Benqlilou and Ahmed Zoubaa, Fouad was surrounded by the flavors and traditions of Moroccan cooking from an early age. At 17, he moved to Canada for university and later spent ten years in New York City, where his love for sharing Moroccan culture and cuisine grew even stronger. Inspired by his mother’s cooking and family traditions, Fouad has now brought that passion to Indianapolis, where he has built not only his restaurant but also his home.

Joining him is his nephew, Achraf Zoubaa, who moved to the U.S. in 2010 after growing up in Morocco, savoring his grandmother’s meals -- experiences that sparked his own love for Moroccan cuisine. Together, they carry forward the rich flavors, traditions, and hospitality of Morocco, creating a place where every meal feels like family.

The Inspiration

Zineb Zoubaa was the heart of her family, and her love was most often felt in the meals she prepared. Every dish she cooked carried her full heart, seasoned not only with spices but with care, pride, and the joy of nourishing those she loved. To her children and grandchildren, her food was incomparable, a reflection of her warmth and the traditions she held dear. Her kitchen was always filled with the sounds of laughter, stories, and the comforting aromas of recipes that connected generations. Zineb lived a long, beautiful life surrounded by family, joy, and love. She is remembered and celebrated by her five children, 14 grandchildren, and 12 great-grandchildren, each of whom carry a piece of her spirit and her traditions forward.

The Chef

Chef Aziz Mountassar, Executive Chef at Marrakesh, is passionate about sharing his signature French-Moroccan cuisine. Born in Casablanca, Morocco, he grew up in a culture where food was central to daily life and was deeply inspired by his grandfather, who once cooked for the King of Morocco. Though he first earned a master’s degree in economy and political management, Aziz ultimately chose to follow his heart and pursue a culinary career, honoring his grandfather’s legacy.

In France, he trained with master chefs who taught him to respect each ingredient and transform food into both flavor and art. His philosophy is rooted in connecting with people—using vibrant colors, bold flavors, and thoughtful presentation to tell a story with every plate. At Marrakesh, Chef Aziz brings this vision to life, blending tradition with creativity and inviting guests to experience the warmth, richness, and hospitality of Moroccan culture.
